The weather was nice today, so I decided to head north and take a walk around North Vancouver to soak in its unique atmosphere. For dinner, I stopped by one of the most talked-about Korean restaurants in the area—South Castle Korean Restaurant, often praised as the go-to spot for authentic Korean food in North Van.
I went on a Saturday evening around 6 p.m., and by the time we arrived, there were already four tables ahead of us on the waiting list. A little tip: if you leave your phone number with the staff, you don’t need to wait inside. You can take a walk nearby or wait in your car—they’ll call when your table is ready.
Update: South Castle also has a location near Lougheed in Coquitlam! Personally, I found the North Vancouver branch slightly tastier, but the Coquitlam branch has a bigger dining space and much shorter wait times. Both are good options, depending on what you value more.
Grilled Beef Intestines
The main reason I went to South Castle was for their sizzling grilled beef intestines. Ever since moving to Vancouver, I’ve been searching for this dish, and I finally found it here.

At South Castle, the beef intestines come pre-grilled on a hot plate rather than raw for you to grill at the table. Even so, they’re delicious—savory, aromatic, and perfectly seasoned. The platter includes beef intestines, onions, green and red peppers, garlic, and potato slices. Black pepper helps cut through the gaminess, while salt brings out the flavor.

As soon as the dish arrives, the rich aroma fills the table. Salty, savory, and a little chewy, it pairs amazingly well with a bowl of rice.
Bibim Naengmyeon (Cold Spicy Noodles)
Different from mul-naengmyeon (cold noodles in broth), bibim-naengmyeon is mixed with a spicy sauce and just a little liquid at the bottom. South Castle’s version comes with two slices of beef, shredded cucumber, carrots, cabbage, bean sprouts, and half a boiled egg, topped with a generous scoop of spicy sauce.

Once everything is mixed, you can use scissors to cut the noodles for easier eating. The sauce here has more heat and tang compared to other restaurants’ versions, with less sweetness. If you love spicy cold noodles, you’ll really enjoy this. Even with no broth, there are ice chips at the bottom to keep it refreshing and chilled.
Stone Pot Bibimbap

Of course, you can’t go wrong with the Korean classic—stone pot bibimbap. Served sizzling hot, the stone pot creates a crispy rice crust at the bottom while keeping everything warm for mixing.
South Castle’s bibimbap includes cucumber, bean sprouts, perilla leaves, mushrooms, bellflower root, and a sunny-side-up egg on top. Drizzled with sesame oil and sprinkled with sesame seeds, it’s fragrant, colorful, and comforting with every bite.

Thoughts on South Castle
If you’re looking for authentic Korean food in North Vancouver, South Castle Korean Restaurant is a must-visit. Their grilled beef intestines set them apart—most other Korean spots in Vancouver only serve beef intestines in hotpot form. Since I prefer the grilled version, South Castle is always my top choice. The flavors are bold, the prices are reasonable, and the overall experience feels very close to dining in Korea.
