VanEats | Pearl Hot Pot | Fresh Short Rib Hot Pot in Burnaby

Friday night plans do not always go as expected. We showed up at Pearl Hot Pot around 5:30 pm without a reservation, not realising the place had been fully booked for the evening. We were lucky. The staff managed to squeeze us in as the very last two walk-in customers that night, and we slid into our seats at the high counter just before the door was closed to newcomers.

That kind of last-minute luck sets a good mood for a meal.

Pearl Hot Pot has a setup unlike most hot pot restaurants I have been to in Metro Vancouver. The space feels more like a Japanese ramen counter than a traditional Chinese hot pot hall. High tables, high chairs, individual induction cooktops built right into the counter. There are a few couch seats along the side, but those are reserved for groups of four or more. If you are coming as a pair like we were, you will be at the counter, and honestly it is a fun way to eat.

The regulars here are clearly regulars. More than once I noticed the staff greeting customers by name and starting to put in their usual orders before they even sat down. That kind of familiarity says a lot about a restaurant.

The Combo: What You Actually Get

We went with a fish combo set, which came with a soup base, a full vegetable and ingredient bowl, a drink, and your choice of starch. You can pick between rice, udon, or vermicelli to finish the pot at the end.

One thing worth knowing before you order: if you add a side order on top of your combo, the side order does not automatically come with its own soup. That means if you are ordering extra meat to share, you would normally need to pay extra for a second soup base.

We had originally planned to share one pot with a satay soup base and just split the ingredients. But the staff noticed our setup and brought out a complimentary original broth for the side order at no extra charge. A small gesture, but it made a real difference to how the meal felt.

Vegetable and Ingredient Bowl

The combo comes with a generous bowl of fresh vegetables and ingredients. On the night we visited it included a shrimp, tofu, baby corn, tomatoes, fish balls, enoki mushrooms, cabbage, a sausage, and an egg on the side. Everything goes into the pot in stages, the denser items first and the leafy vegetables near the end.

It is a solid foundation for a hot pot meal, and the ingredients were fresh. No limp mushrooms or sad tofu here.

The Satay Soup Base

We chose the satay soup as our main broth. It arrived already steaming away, deep orange and rich fragrant with peanut. The satay base here is on the richer side, which works well for cooking both fish and beef without overpowering either.

The original soup they brought as a bonus was a light, clear broth. Having both running side by side actually turned out to be a nice way to eat. You could cook things in the satay for bold flavour, or drop ingredients into the clear broth for something cleaner.

Fresh Fish Slices

The fish in the combo was one of the highlights of the night. The slices were fresh, thin, and clean tasting, nothing like the pre-frozen fish you sometimes get at all-you-can-eat hot pot spots. In the satay broth they cooked through in about thirty seconds and came out silky and tender.

This is the kind of ingredient that immediately tells you a restaurant is not cutting corners.

XL Short Rib

The real centrepiece of the night was the XL short rib add-on. The platter arrived on a wide white plate, the slices rolled into tight scrolls, the marbling visible from across the counter.

The portion was genuinely large. We kept putting slices into the satay broth a few at a time and working through the plate slowly. The fat renders quickly in a hot pot and gives the broth a richer flavour as the meal goes on.

If you are here for the meat, this is the order to make.

Dessert: Sesame Ice Cream

The combo ended with a dessert. That night it was sesame ice cream, rich and creamy with a deep roasted sesame flavour. I did not get a photo because I was too busy eating it. That is the most honest review I can give. Next time I go back, I am taking the picture first.

Thoughts on Pearl Hot Pot

Pearl Hot Pot earns its regulars. The meat quality is noticeably better than what you find at the bigger hot pot chains, the staff are genuinely warm, and the bar-style setup makes it feel like a neighbourhood spot rather than a tourist restaurant. The fact that we squeezed in as the last two walk-ins on a fully booked Friday night and still had a relaxed, unhurried meal says something about how the place operates.

If you are going, make a reservation. If you forget like we did, show up early and try your luck at the counter.
